Vanillakipferl is one of the most popular Christmas cookies of the german and austrian people. they are a traditional bohemian Christmas cookie in a half-moon shape. Our vanillakipferl recipe is also vegan friendly and made with our rice syrup as an alternative to sugar.
• 1.000kg Wheat Flour
• 700g Margarine (Palm-Free)
• 400g Rice Syrup
• 150g Almonds roasted
• 10g Oat Beta-Glucan
• 10g Salt
• 2-3g Fresh Vanilla
Mix Margaine, Rice Syrup and Salt and stir for 5 min. add flour, almonds, oat beta-glucan and vanilla and mix it slowly until it becomes a dough. Let the dough rest in a cool place overnight.
Shape the dough into small crescent moons and place them on the baking sheet. Alternatively, you can use a baking pan for vanilla kipferl if you have one.
Bake the cookies at 200°C for about 10 to 12 minutes. Let the vanilla kipferl cool down and sprinkle them with a lot of powder sugar until they’re almost white.
